Orzo Salad with Yogurt Dill Sauce
serves 4
Ingredients
- 1/2 C plain yogurt
- 4 T parsley, minced
- 2 T dill, minced
- 2 T lemon juice
- 3 T olive oil
- 1 C orzo, cooked and cooled
- 1 C peas, cooked and cooled
- 4 ea Roma tomatoes, diced
- 1 ea cucumber, large bite dice
- 2 ea carrots, small bite dice
- 1/2 ea red onion, minced
Instructions
- Whisk together the yogurt, lemon juice, and olive oil, mix in the parsley and dill, then season to taste.
- Toss the orzo, peas, tomatoes, cucumber, carrots and red onion in the dressing.
- Plate and serve chilled.
